200grams cottage cheese
1 Tablespoon Psyllium husk
50 grams butter- or coconut oil
120ml fresh raspberries, blueberries or strawberries
220ml heavy whipping cream
Blend all ingredients for the batter into a smooth consistency in a bowl using a spoon or fork. Let sit for 5 minutes.
Heat butter or oil in a frying pan. Fry the pancakes on medium heat for 3-4 minutes on each side. Time will vary for stove tops.
Flip very carefully. Be sure not to let the cottage cheese lumps stick to the pan as they melt.
Sever with Blueberries or any berries you have and heavy or double cream.
