The best gourmet pizza you have ever eaten is right here- well that is what I thought last Friday night when I whipped this little beauty up for the household!
This pizza will fill you up; it won’t leave you craving sugars after your meal and it will leave your insulin levels where they should be – LOW!
Grain Free, Coconut Base Pizza Cheesy Meat lovers with a little bit of green!
Pizza Dough Ingredients:

Instructions:
Preheat oven to 220deg
Chop and prepare all ingredients- place aside for when ready to top pizza
In one saucepan place chorizo.
In second saucepan place chicken- brown both chicken and chorizo.
Whilst chorizo and chicken is cooking- put Broccoli in Steamer and steam till just al dente’
Once chorizo and chicken are browned to your liking- place in separate bowls in preparation to top your pizza
Add red onion to the pan that had the chorizo and cook in the oil of the chorizo to your liking.
Add bacon to other pan- brown to your liking. When bacon is done- place in separate bowl and add mushrooms- brown slightly
Place a bed of rocket down onto your plate
Dollop as much guacamole on the side as you like
Cut your pizza and place the sliced of pizza on top of your rocket lettuce. Delish!
Remember:
Be prepared that a coconut flour pizza base is more like a batter than the gluten filled flour dusted pizza dough you saw the local pizza guy throw up towards the fan and back down again in an artful swirl of togetherness. Coconut dough/batter, will not look like the glutenous wheat dough you are use to- think batter. It will be sticky to spread out over your tray- which is why you will need to grease your fingers.
The best way to get a crispy crust is to grease the pizza tin before you lay the greaseproof paper on top of it. Then grease the greaseproof paper as well before spooning on the batter.
And yes! You can pick coconut dough up with your fingers once it is cooked. Just like a normal pizza!
Pizza Base: Wisk eggs, sour cream, garlic, salt and pizza spice. Add coconut flour one spoonful at a time and mix in so there are no lumps and the dough starts to firm. Line a 40x30cm pizza tray- or close to it, with grease proof paper-grease paper with coconut oil. With oil greased fingers -or the back of a greased spoon (I found it easier with my fingers) press the batter across the paper until it is spread out evenly across the pizza tray. Smooth the edges or they will crumble. Bake for 10 minutes. Cool until firm to the touch. Spread the tomato sauce and chilli paste on the dough, put on your toppings, the onion, bacon, broccoli, chicken, chorizo – leave cheese until last- once all toppings are on your pizza, pour a little more tomato paste/sauce over the top- just a little bit for moisture. Then sprinkle the cheeses over the top. Bake for another 12 – 15 minutes (depending on the thickness of your toppings) until the cheese has all melted and is bubbly but not brown. |

Guacamole on the side
Whilst the pizza slightly cools on the bench, slice the avocado in half- remove the seed, spoon out both sides of avocado into a bowl. Mash the avocado with a fork until smooth. Stir in the onion and tomato. Squeeze the juice of one lemon into the mix- stir again. And your Guac is ready!
